I created a salad that’s super easy and delicious! Boil some soba noodles or whole wheat noodles. While your noodles are cooking saute some veggies. I used mushrooms, shredded carrots, edamame and spinach. Once the noodles are done, drain and stir in veggies. Finally, toss in some Trader Joe’s Soyaki sauce (or Soyvey). Let cool overnight and you have lunch for a few days! Yum!
