Easy Roasted Chickpea Tacos


I found this recipe for Chickpea Tacos at Peas and Thank You a little over a month ago, and since then we have made them twice! Because they are so easy, quick cheap and delicious I have a feeling they will quickly become a staple in our meal rotation!

To make them, gather the following:

Makes 8 tacos
2 t. chili powder
1/4 t. garlic powder
1/4 t. onion powder
1/4 t. dried oregano
1 1/2 t. ground cumin
1 t. sea salt
1 T. lime juice
2 T. water
One 14 oz. can of chickpeas, drained and rinsed
8 taco shells
Taco trimmings: we used plain 0% fat greek yogurt (instead of sour cream), tomatoes, avocado, shredded cheese and hot sauce

And then, just follow these easy steps!

Step one: mix the In a large bowl, combine chili powder, garlic powder, onion powder, oregano, cumin, salt, lime juice and water and let marinade for at least 30 minutes (we let them marinade overnight this time)

Step Two: preheat your oven to 375 degrees, then roast the chickpeas in a single layer for 20-30 minutes until they are crispy

Once the chickpeas are roasted, I like to heat up my taco shells while the chickpeas cool a bit

Step Three: Get your toppings ready! We like to use greek yogurt, tomatoes, avocado, hot sauce and a little shredded cheese

Step Four: Dig in!

Once you have the spices on hand, this recipe is really affordable to make! One thing we are going to do is pre-mix the spices in individual bags so the recipe is even quicker to prep.
