I found this recipe for Chickpea Tacos at Peas and Thank You a little over a month ago, and since then we have made them twice! Because they are so easy, quick cheap and delicious I have a feeling they will quickly become a staple in our meal rotation!
To make them, gather the following:
Makes 8 tacos
2 t. chili powder
1/4 t. garlic powder
1/4 t. onion powder
1/4 t. dried oregano
1 1/2 t. ground cumin
1 t. sea salt
1 T. lime juice
2 T. water
One 14 oz. can of chickpeas, drained and rinsed
8 taco shells
Taco trimmings: we used plain 0% fat greek yogurt (instead of sour cream), tomatoes, avocado, shredded cheese and hot sauce
And then, just follow these easy steps!
Once you have the spices on hand, this recipe is really affordable to make! One thing we are going to do is pre-mix the spices in individual bags so the recipe is even quicker to prep.
