Extra Prep Sunday


This weekend was absolutely perfect-productive and relaxing! My mood always varies on Friday nights, but I never waiver from my feelings on weekends. I like my weekends relaxing, productive and revitalizing. This weekend was exactly that!

Saturday, I literally spent all day cleaning our condo while Rich ran errands and went grocery shopping.

After cleaning, I spent about half an hour chopping vegetables- I got celery, carrots, potatoes, sweet potatoes, onions and garlic cloves ready for the week!

Saturday night, Rich and I went into the city to go to dinner with my little cousins who were visiting the city at one of my favorite Lakeview restaurants, Wilde. I used to go there all the time when I lived nearby. It was fun visiting my old neighborhood and seeing my cousins at the same time!

Today, we started our day at the gym! Rule of thumb in our house is that if we don’t go to the gym first thing on the weekends, it does not happen. I ran a practice 5K, getting ready for my Turkey Trot!

Then, its was time to prep for football Sunday! Our friends get really into the Bears and today is our day to host. I cooked cornbread muffins, powder keg chili and buffalo chicken dip for the game and then hard boiled some eggs, made Harvest Chicken Quinoa Soup and Pecan Maple Breakfast Cookies for the week!

Now, I have a cocktail in hand and it’s time for football, friends and chili! Cheers to Sunday night and to a good week ahead!

  1. Prepping for the week (like you did, cutting up veggies, etc.) is the best way for me to eat healthy during the week!

    I always cook something in bulk Sunday night to bring as lunch for the week. If I make something good I don’t mind eating it for the next 5 days and it makes packing food so much easier.

  3. You’re doing the North Shore Turkey Trot right? Today is the last day to register before prices go up and I’m 85% sure I’m gonna do it πŸ™‚
